Thai Basil Beef

Method

  1. Heat two drops of oil in a hot wok over a medium-high flame.
  2. Add the lean ground beef and stir-fry until the beef fat renders.
  3. Push the beef to the side of the wok to expose the rendered fat/oil.
  4. Add chopped red chili padi and two cloves of black garlic into the oil. Smash the black garlic into the pan.
  5. Add minced onion and garlic, then mix everything thoroughly with the beef.
  6. Season with dark soy sauce, oyster sauce, fish sauce, and a dash of white pepper. Stir-fry to incorporate all sauces completely.
  7. Add a handful of fresh Thai basil leaves and toss for one final mix until the basil is wilted and aromatic.
  8. Plate with a side of steamed rice and serve hot.
