Spicy Chilli Fritter (Milagai Bajji)

Elevate a classic South Indian street food favourite with Chef Annil's decadent twist on Milagai Bajji, also known as Spicy Chilli Fritter. Large, mild green chillies are de-seeded, stuffed with gooey mozzarella cheese, and layered with spiced masala potato. They are then dipped into a seasoned chickpea and rice flour batter for ultimate crispiness and deep-fried to a perfect golden brown. Crispy on the outside, and incredibly cheesy and spiced on the inside, this snack is perfect for rainy days or any casual gathering.

Spicy Chilli Fritter (Milagai Bajji)

Method

  1. Slice the green chillies in half lengthwise and scrape out the seeds to hollow them.
  2. Insert thin strips of mozzarella cheese inside each hollowed chilli.
  3. Pipe the masala potato mixture into the chillies next to the cheese.
  4. In a bowl, combine chickpea flour, rice flour, turmeric powder, salt, cumin powder, and chili powder.
  5. Gradually add water and mix by hand until you achieve a thick, smooth batter consistency.
  6. Dip each stuffed chilli into the batter, ensuring it is completely coated.
  7. Drop the coated chillies carefully into hot oil and deep-fry for 10 to 15 minutes until golden and crispy.
  8. Remove and drain on a wire rack before serving hot.
