Elevate a classic South Indian street food favourite with Chef Annil's decadent twist on Milagai Bajji, also known as Spicy Chilli Fritter. Large, mild green chillies are de-seeded, stuffed with gooey mozzarella cheese, and layered with spiced masala potato. They are then dipped into a seasoned chickpea and rice flour batter for ultimate crispiness and deep-fried to a perfect golden brown. Crispy on the outside, and incredibly cheesy and spiced on the inside, this snack is perfect for rainy days or any casual gathering.

Method
- Slice the green chillies in half lengthwise and scrape out the seeds to hollow them.
- Insert thin strips of mozzarella cheese inside each hollowed chilli.
- Pipe the masala potato mixture into the chillies next to the cheese.
- In a bowl, combine chickpea flour, rice flour, turmeric powder, salt, cumin powder, and chili powder.
- Gradually add water and mix by hand until you achieve a thick, smooth batter consistency.
- Dip each stuffed chilli into the batter, ensuring it is completely coated.
- Drop the coated chillies carefully into hot oil and deep-fry for 10 to 15 minutes until golden and crispy.
- Remove and drain on a wire rack before serving hot.
