Soya Chunks Masala

A flavorful and protein-packed vegetarian dish, Soya Chunks Masala combines rehydrated soya chunks and pre-cooked potatoes in a spiced, coconut milk-infused gravy. Sautéed with fresh aromatics, green chilies, and curry leaves, this easy-to-follow recipe uses a fragrant blend of traditional Indian spices. Perfect to pair with warm, soft rotis or hot steamed rice.

Soya Chunks Masala

Ingredients

Method

  1. Add chopped onion, ginger, and garlic to a hot pan first.
  2. Add cooking oil, green chili, and curry leaves. Sauté until the aromatics are lightly colored.
  3. Add chopped tomatoes to the pan to deglaze it.
  4. Stir in the spice blend: garam masala, meat curry powder, chili powder, salt, and coriander powder.
  5. Add water and a splash of coconut milk, then stir to combine.
  6. Incorporate the pre-cooked (microwaved) potatoes.
  7. Add the rehydrated soya chunks into the gravy.
  8. Cover the pan with a lid and let the mixture boil for one minute.
  9. Serve hot with rice or rotis.
