- Heat pure coconut oil in a wok.
- Start by adding mustard seeds and one teaspoon of fennel seeds.
- Add shallots (chinna vengayam), minced garlic, and ginger paste.
- Stir in fresh curry leaves and fresh green chilies, and let them fry.
- Once caramelized, add fresh chopped tomatoes and drumsticks.
- In a small bowl, prepare the masala by combining red chili powder, fish masala, cumin, coriander powder, and salt.
- Add toasted and ground fenugreek powder to the wok, followed by the prepared masala mixture.
- Toss in the okra, radish, and mango.
- Add the canned sardines in tomato sauce, including all the tomato liquid.
- Add the separately boiled potatoes into the curry.
- Simmer and stir gently until everything is fully cooked and aromatic.
- Serve hot with white rice and a vegetable stir fry.
