Often underrated, moringa leaves have a gentle bitterness similar to spinach that pairs beautifully with aromatics and grated coconut. In this quick cooking demo, Chef Annil tempers mustard and cumin seeds in coconut oil before sautéing onions, ginger, garlic, and dried red chilies. Crispy pan-fried anchovies (ikan bilis) are folded in for a savory crunch, followed by fresh moringa leaves and grated coconut to finish.

- Heat coconut oil in a pan over medium heat.
- Add mustard seeds and cumin seeds, allowing the mustard seeds to pop.
- Add chopped onion, ginger, and garlic, and sauté.
- Stir in the dried red chilies.
- Make a well in the center of the pan, add a little more oil, then add anchovies and let them fry until crispy.
- Add fresh moringa leaves and season with salt. Stir-fry and allow them to wilt down.
- Once the moringa has wilted, mix in the grated coconut and stir-fry briefly before serving.
