Low-Carb Beef Kimchi Fried Rice with Konnyaku

Method

  1. Brown the ground beef in a hot wok, allowing it to cook in its own fat.
  2. Add the garlic, sliced onion, and sliced green chili to the wok and stir-fry with the beef.
  3. Add the kimchi and mix well with the beef and aromatics.
  4. Push the ingredients to the side of the wok and crack in three eggs, scrambling them until cooked.
  5. Add the konnyaku rice and stir-fry everything together.
  6. Mix in the gochujang paste or sauce to season.
  7. Toss in the spring onions and roasted sesame seeds, stir to combine, and serve hot.
