Kovakkai Poriyal (Ivy Guard Stir-Fry)

Method

  1. Heat coconut oil in a pan over medium heat.
  2. Add the chopped onion, minced ginger, minced garlic, and curry leaves. Sauté for about 2 minutes.
  3. Add the sliced ivy guard to the pan and toss to combine with the aromatics.
  4. Season with a pinch of pink Himalayan salt and add a small splash of water.
  5. Let it cook in the steam for a few minutes until partially cooked.
  6. Sprinkle a generous amount of homemade idli powder (gunpowder) on top, stir well, and cook until the ivy guard is fully tender.
