Low-Calorie Konjac Fried Rice

Ingredients

Method

  1. Measure 1 cup of Konjac dry rice into a bowl.
  2. Add 1 cup of boiling water to the bowl, stir, and set aside to rehydrate.
  3. Heat a splash of cooking oil in a non-stick wok over medium heat.
  4. Sweat the chopped onions, sliced red chili, and chopped spring onion in the wok.
  5. Add the peeled prawns and fry them lightly.
  6. Push the ingredients to the side of the wok and crack in two eggs.
  7. Add a spoonful of fried garlic, then scramble the eggs in the wok.
  8. Toss in the rehydrated Konjac rice and mix everything together.
  9. Season with a splash of fish sauce, a drizzle of sesame oil, and a generous shake of white pepper.
  10. Give everything a final thorough toss in the wok, then plate and serve.
