Kerala-Style Gula Melaka Puttu

Kerala-Style Gula Melaka Puttu

Method

  1. In a mixing bowl, combine the rice flour with a pinch of sugar and salt.
  2. Gradually sprinkle water while mixing with your hand until the mixture reaches a loose, sandy texture that holds its shape when squeezed but crumbles easily.
  3. Prep the puttu steamer by boiling water in the bottom pot.
  4. Layer the inside of the steamer cylinder starting with fresh grated coconut, followed by the prepared puttu flour, and then a layer of chopped gula melaka.
  5. Repeat the layers and finish with another layer of grated coconut.
  6. Close the steamer lid and place it securely on top of the boiling water pot.
  7. Steam until hot steam escapes visibly from the top of the cylinder.
  8. Carefully remove the cylinder and use a stick or rod to push the steamed puttu out onto a serving plate.
