Home-Style Fried Kway Teow

Method

  1. Heat oil in a wok and add chopped onion, minced garlic, chili paste, and dried shrimps. Stir-fry together until the chili paste darkens into a deep maroon shade.
  2. Push the mixture to the sides of the wok, letting the oil pool in the center. Pour in beaten eggs and scramble them until cooked.
  3. Stir the scrambled eggs back into the paste, then mix in Chinese chives, sliced fish cake, chye sim, tau pok, and bean sprouts.
  4. Season with oyster sauce, dark soy sauce, and tomato ketchup.
  5. Add the kway teow (flat rice noodles) and yellow noodles.
  6. Stir-fry thoroughly using an over-and-under motion until all ingredients are fully incorporated, heated through, and well coated.
