  1. Soak the bee hoon in cold water until it becomes pliable, then drain.
  2. Heat a wok over medium heat and add a small amount of neutral oil.
  3. Add the minced garlic and sliced red chilies, cooking until the garlic is lightly browned.
  4. Add a splash of water before the garlic burns to create a base.
  5. Stir in oyster sauce, dark soy sauce, and a dash of white pepper.
  6. Add the tofu puffs to absorb the liquid and flavors.
  7. Incorporate the soaked bee hoon and stir-fry to mix thoroughly.
  8. Toss in a healthy amount of beansprouts at the very end to keep them crunchy.
