Instead of using high-calorie kataifi pastry, this guilt-free version uses crushed Weet-Bix mixed with creamy hazelnut spread. The mixture is wrapped around a fresh strawberry inside a piece of soft, chewy Vietnamese rice paper, then finished with a generous dusting of cocoa powder. It delivers the signature crunchy, chocolatey, and chewy texture with a fraction of the calories, making it a perfect quick fix for sweet cravings.

Method

  1. Crush the Weet-Bix biscuits by hand in a large mixing bowl.
  2. Add a spoonful of hazelnut spread to the crushed Weet-Bix and mix thoroughly until it reaches a clumped consistency.
  3. Prepare the strawberries by slicing off their leafy tops.
  4. Pour cocoa powder into a flat tray or shallow dish and set aside.
  5. Dip a sheet of Vietnamese rice paper briefly into a bowl of water until softened.
  6. Place a portion of the Weet-Bix hazelnut mixture onto the wet rice paper, then top with a whole strawberry.
  7. Fold the sides of the rice paper over the filling and roll it up tightly into a small packet.
  8. Roll the assembled packet in the cocoa powder until fully coated.
  9. Repeat the assembly process for the remaining ingredients, then serve.
