Fish Puttu

Learn how to make Fish Puttu (Sura Puttu), a comforting South Indian scrambled fish dish. In this recipe, Chef Annil uses shark fish marinated in turmeric, steam-fries it, and then debones and scrambles it with mustard seeds, coconut oil, onions, ginger, garlic, fresh curry leaves, grated coconut, and spices. Fish Puttu

Ingredients

Method

  1. Marinate the cubed shark fish with turmeric powder.
  2. In a wok, add a splash of water, a splash of coconut oil, and the marinated fish. Cover and steam-fry for a few minutes until the fish is cooked.
  3. Remove the fish from the heat, let it cool slightly, and carefully debone it, separating the cartilages and bones from the meat.
  4. In a dry pan, add mustard seeds, a splash of coconut oil, chopped onion, ginger, and garlic. Fry until golden brown.
  5. Add fresh curry leaves and grated coconut to the pan, tossing to combine.
  6. Stir in the whole spices (star anise, cinnamon, cumin) and equal parts coriander and cumin powder. Lightly toast the mixture.
  7. Add the deboned, scrambled fish into the pan and toss well to combine all ingredients.
  8. Serve warm with plain white rice.
