Method
- Marinate the cubed shark fish with turmeric powder.
- In a wok, add a splash of water, a splash of coconut oil, and the marinated fish. Cover and steam-fry for a few minutes until the fish is cooked.
- Remove the fish from the heat, let it cool slightly, and carefully debone it, separating the cartilages and bones from the meat.
- In a dry pan, add mustard seeds, a splash of coconut oil, chopped onion, ginger, and garlic. Fry until golden brown.
- Add fresh curry leaves and grated coconut to the pan, tossing to combine.
- Stir in the whole spices (star anise, cinnamon, cumin) and equal parts coriander and cumin powder. Lightly toast the mixture.
- Add the deboned, scrambled fish into the pan and toss well to combine all ingredients.
- Serve warm with plain white rice.
