Din Tai Fung-Style Prawn Fried Rice

Method

  1. Toss the prawns with cornstarch to velvet them, ensuring they stay plump and tender.
  2. Finely slice the fresh spring onions.
  3. Heat sunflower oil in a hot wok.
  4. Sauté the chopped onion, minced garlic, and a portion of the spring onions without letting them brown.
  5. Add the velveted prawns to the wok and stir-fry briefly.
  6. Whisk six eggs and pour them into the wok with the prawns.
  7. While the eggs are still runny, add the cooked jasmine rice to help coat every grain of rice.
  8. Season with chicken bouillon powder, white pepper, and a touch of MSG.
  9. Using two spatulas, toss and mix everything thoroughly over high heat.
  10. Stir in the remaining sliced spring onions right at the end before serving.
