Chef Annil shares his signature recipe for a crispy, flavorful Indian-style fish fry using premium frozen cod fillets. Marinated in an aromatic blend of chili powder, cumin, coriander, turmeric, black pepper, fish masala, fenugreek, and fresh lime juice, the fish is coated in crunchy rava (semolina) and shallow-fried in Herbal Pharm's coconut oil. Perfected with basted oil and fresh curry leaves, this dish delivers a beautifully crispy exterior with tender, flaky fish inside.

Method
- Thaw and portion the frozen cod fillets.
- On a plate or banana leaf, combine the chili powder, salt, turmeric, cumin powder, black pepper, fish masala, coriander powder, and fenugreek powder.
- Squeeze the juice of one lime and add a splash of Herbal Pharm coconut cooking oil into the spice mix. Mix thoroughly with your hands to form a thick masala paste.
- Coat the cod fillets evenly with the masala paste and let them marinate.
- Heat Herbal Pharm coconut cooking oil in a flat frying pan over low-medium heat.
- Spread the rava (semolina) on a tray. Press the marinated fish fillets into the rava, coating all sides thoroughly to create a crust.
- Place the coated fish into the hot oil. Fry on a low flame to avoid burning.
- Tilt the pan and spoon the hot oil over the top of the fish to baste.
- Scatter fresh curry leaves over the fish, then flip the fillets to fry the other side until golden and crispy.
- Drain and serve hot on a plate lined with a banana leaf.
