Crispy Rava Fried Cod

Ingredients

• 1 packet frozen cod fillets
• 1 tbsp chili powder
• 1 tbsp cumin powder
• 1 tsp coriander powder
• 1 tsp turmeric powder
• 1 tsp black pepper
• 1 tbsp fish masala
• 1/4 tsp fenugreek powder
• Salt to taste
• Juice of 1 lime
• Herbal Pharm coconut cooking oil
• 1 cup rava (semolina)
• Fresh curry leaves

Method

1. Thaw and portion the frozen cod fillets.
2. On a plate or banana leaf, combine the chili powder, salt, turmeric, cumin powder, black pepper, fish masala, coriander powder, and fenugreek powder.
3. Squeeze the juice of one lime and add a splash of Herbal Pharm coconut cooking oil into the spice mix. Mix thoroughly with your hands to form a thick masala paste.
4. Coat the cod fillets evenly with the masala paste and let them marinate.
5. Heat Herbal Pharm coconut cooking oil in a flat frying pan over low-medium heat.
6. Spread the rava (semolina) on a tray. Press the marinated fish fillets into the rava, coating all sides thoroughly to create a crust.
7. Place the coated fish into the hot oil. Fry on a low flame to avoid burning.
8. Tilt the pan and spoon the hot oil over the top of the fish to baste.
9. Scatter fresh curry leaves over the fish, then flip the fillets to fry the other side until golden and crispy.
10. Drain and serve hot on a plate lined with a banana leaf.
