- Cut the silken egg tofu into thick slices.
- Prepare a dry batter bowl with equal parts of plain flour and cornstarch.
- Gently coat the tofu slices in the flour mixture, then deep fry until golden brown. Drain and set aside.
- Coat the fresh tiger prawns in the same flour mixture, shake off the excess flour, and deep fry until crispy and fully cooked. Drain and set aside.
- In a pan over low to medium heat, melt a generous block of quality butter.
- Add diced red chili and fresh curry leaves to the melted butter.
- Add a pinch of salt, Nestum multi-grain cereal, and sugar to taste. Toss to combine.
- Fry the cereal mixture on low to medium heat until toasted and fragrant.
- Toss the fried tofu and prawns into the toasted cereal mixture, coating them evenly before serving.
