Cereal Prawn & Tofu

Method

  1. Cut the silken egg tofu into thick slices.
  2. Prepare a dry batter bowl with equal parts of plain flour and cornstarch.
  3. Gently coat the tofu slices in the flour mixture, then deep fry until golden brown. Drain and set aside.
  4. Coat the fresh tiger prawns in the same flour mixture, shake off the excess flour, and deep fry until crispy and fully cooked. Drain and set aside.
  5. In a pan over low to medium heat, melt a generous block of quality butter.
  6. Add diced red chili and fresh curry leaves to the melted butter.
  7. Add a pinch of salt, Nestum multi-grain cereal, and sugar to taste. Toss to combine.
  8. Fry the cereal mixture on low to medium heat until toasted and fragrant.
  9. Toss the fried tofu and prawns into the toasted cereal mixture, coating them evenly before serving.
