The prawns are coated in seasoned flour, deep-fried until golden, and then tossed in a rich, glossy black pepper sauce featuring fresh curry leaves, freshly ground black pepper, oyster sauce, and dark soy sauce. This savory, slightly sweet, and peppery dish is perfect for seafood lovers.

Black Pepper Prawns

Method

  1. Melt soft butter in a large wok.
  2. Add chopped onion, ginger, and garlic, and fry until fragrant.
  3. Toss the tiger prawns in seasoned flour until fully coated, then deep-fry until cooked and crispy.
  4. To the wok, add a bunch of fresh curry leaves and freshly ground black pepper.
  5. Pour in the oyster sauce, dark soy sauce, and water, bringing the mixture to a boil.
  6. Prepare a slurry with one tablespoon of cornstarch and a little water, ensuring there are no clumps.
  7. Pour the cornstarch slurry into the boiling sauce to thicken.
  8. Add the deep-fried prawns to the sauce and toss thoroughly to coat.
