- Heat coconut oil in a large steel wok.
- Add mustard seeds, cumin seeds, and curry leaves.
- Add chopped onion, ginger, and garlic, and sauté.
- Incorporate a blended mixture of coconut, green chili, cumin, and coriander, frying until the raw smell of the chili dissipates.
- Season with salt, additional cumin, and turmeric, cooking until the moisture dries up, then transfer the mixture to a bowl and set aside.
- Add more coconut oil to the wok and add the chopped snake beans.
- Stir occasionally to achieve a nice caramelization on the beans.
- Once the beans are three-quarters cooked, mix in the set-aside coconut paste.
- Cover the wok and cook for 15 minutes until the beans are completely softened.
