Method

  1. Heat coconut oil in a large steel wok.
  2. Add mustard seeds, cumin seeds, and curry leaves.
  3. Add chopped onion, ginger, and garlic, and sauté.
  4. Incorporate a blended mixture of coconut, green chili, cumin, and coriander, frying until the raw smell of the chili dissipates.
  5. Season with salt, additional cumin, and turmeric, cooking until the moisture dries up, then transfer the mixture to a bowl and set aside.
  6. Add more coconut oil to the wok and add the chopped snake beans.
  7. Stir occasionally to achieve a nice caramelization on the beans.
  8. Once the beans are three-quarters cooked, mix in the set-aside coconut paste.
  9. Cover the wok and cook for 15 minutes until the beans are completely softened.
