Silken Mapo Tofu Noodles

Chef Annil shares his quick, high-protein take on the viral silken mapo tofu noodles. By pan-searing minced beef with onion, ginger, and garlic, he lets the meat's natural fats cook the aromatics without extra oil. The beef is seasoned with chilli crisp, oyster sauce, dark soy sauce, and toasted sesame seeds, then layered over freshly boiled udon noodles. A smooth, creamy blend of silken tofu, fat-free peanut butter powder, and water creates a rich sauce that brings this comforting, spicy noodle dish together.

Silken Mapo Tofu Noodles

Ingredients

Method

  1. In a non-stick wok, add minced onion, ginger, and garlic.
  2. Add minced beef directly to the wok without adding any extra oil, allowing the natural fats from the beef to cook the aromatics. Break the beef apart as it cooks.
  3. Prepare the tofu sauce by adding one tube of silken tofu, 1 tablespoon of peanut butter powder, and a splash of water to a blender. Blend until smooth and creamy.
  4. Once the beef is cooked, add 1 tablespoon of chilli crisp, 1 tablespoon of oyster sauce, and a splash of dark soy sauce. Stir to combine.
  5. Mix in toasted sesame seeds to the beef mixture.
  6. Boil fresh udon noodles in a pan of hot water for less than a minute, then drain and transfer to a serving bowl.
  7. Top the udon noodles with the spicy beef mixture, fresh coriander, and the silken tofu peanut sauce.
  8. Mix thoroughly before eating.
